Does years of experience really matter for Audi transmission work?

I'm trying to decide between two shops in Sharjah for my 2013 A7 transmission rebuild. One has been around for about three years but has shiny new equipment and great Google reviews. The other is a much older shop that looks a bit rough around the edges but the owner has been working on Audis since the 90s. He calls himself a Veteran Audi Specialist Sharjah and honestly he knew things about my car's transmission without even looking at it that the newer shop didn't mention. But I'm torn because the newer shop has nicer facilities and seems more organized. For something as complex as a ZF transmission rebuild, does old school experience beat modern equipment? Or am I just being swayed by a guy who talks a good game? I'd love to hear from anyone who has used a really experienced old timer versus a newer shop and how it worked out.
